    Default Brisket for gameday

Not looking forward to the game today with another crap show anticipated, but we will eat good.

Kroger had briskets on sale for $1.99/lb., cheaper than Sam's. I had to buy a few as I have standing orders from neighbors and coworkers.

Here are some burnt ends so far. The flats are resting and will be sliced soon.

    Solid. Absolutely solid.
Pissin' in the wind, bettin' on a losing friend
Makin' the same mistakes, we swore we'd never make again
And we're pissin' in the wind, but it's blowing on all our friends
We're gonna sit and grin and tell our grandchildren

    Beautiful work!

The last brisket we did was a prime brisket and was delicious - except it turned out a little too tender and was hard to cut without shredding. I’m blaming it on the knife that was used but I’m sure that wasn’t it completely.

All you had to do was send it to Hermy and let him cook on it. It would have toughened right up.
